Guacamole

Serves4

Zingy, yet creamy, and good for converting non-avocado lovers.


About this recipe

I've done it, I've created something with avocado that isn't just tolerable, it's absolutely blinking yummy (even if I do say so myself haha!).

I have never had guacamole before and liked it, it just didn't work for me.

I've never liked avocado's at all but since adding them to some of my green smoothie creations, I've started to get more used to it's taste and texture.

This was so easy, took less than 15 minutes to make – it's zingy yet creamy and good for converting non-avocado lovers like myself!

Ingredients

1/4 red onion, finely diced
1 lime, juiced
1/2 tsp finely ground Himalayan rock salt
3 small avocado's, flesh removed, half mashed, half chopped into small dice
1 vine tomato, seeds removed, finely diced

Method

1. Mix red onion, lime and salt in a small bowl and leave for 10 minutes to soften
2. Gently mix mashed and chopped avocado and tomatoes together. Add black pepper and a small handful of chopped coriander.
3. Gently stir everything together and serve

Tips

Avocados are a fountain of goodness, in a 100g serving you get:

Vitamin K: 26% of the RDA
Folate: 20% of the RDA
Vitamin C: 17% of the RDA
Potassium: 14% of the RDA
Vitamin B5: 14% of the RDA
Vitamin B6: 13% of the RDA
Vitamin E: 10% of the RDA.
Also contains small amounts of Magnesium, Manganese, Copper, Iron, Zinc, Phosphorous, Vitamin A, B1, B2 and B3
160 calories
2 grams of protein
15 grams of healthy fats
9 grams of carbs (but note 7 of those are fibre so there are only 2 “net” carbs = low-carb food
They are also cholesterol and sodium-free
If you have any kind of inflammation, this is the fruit for you!
