A variation of a French recipe Salade Lyonnaise, and completely delicious.
When i lived in France (long time ago!) one of the best things I discovered was a Salade Lyonnaise and it introduced me to the concept of pancetta/bacon and poached egg with salad. This quick lunch is a variation on that and it's delicious!
|4 thin slices pancetta, grilled on kitchen foil for 6-7 minutes until crispy|
|1 large free-range egg, poached for 2 minutes|
|6 cherry tomatoes, halved|
|1 head romaine lettuce, washed and chopped|
|3 tbsps olive oil & a good squeeze of lemon juice, mixed with salt & pepper|
Assemble each part of the salad and gently mix together!
Easily doubled and quadrupled!
