Pancetta & Egg Salad

Serves1

A variation of a French recipe Salade Lyonnaise, and completely delicious.


About this recipe

When i lived in France (long time ago!) one of the best things I discovered was a Salade Lyonnaise and it introduced me to the concept of pancetta/bacon and poached egg with salad. This quick lunch is a variation on that and it's delicious!

Ingredients

4 thin slices pancetta, grilled on kitchen foil for 6-7 minutes until crispy
1 large free-range egg, poached for 2 minutes
6 cherry tomatoes, halved
1 head romaine lettuce, washed and chopped
3 tbsps olive oil & a good squeeze of lemon juice, mixed with salt & pepper

Method

Assemble each part of the salad and gently mix together!

Tips

Easily doubled and quadrupled!
